Lunchtime made Lasagne

Another sunny day! This weather is out-of-the-box. But it is so cold and still I doubt the laundry will actually dry out there.  The quantity of laundry is ridiculous.  I actually had to bring in partially-dried laundry in order to hang out more wet stuff.  Infant reflux must be a boon for the laundry detergent industry.

LASAGNE

Today I have made a lasagne for dinner tonight.  I expect this to taste entirely different from most lasagne I make because this time I am not doing my lazy pre-made pasta sauce version.  I reckon the streaky bacon is going to be the winner ingredient.

In one pan, sizzle 500grams of beef mince, 250grams of chopped streaky bacon, some whole peeled garlic (I have run out of onions), and some sliced mushrooms.  Once that has sizzled, add a tin of whole peeled tomoatoes (chopped).  If you want a saucier (haha) lasagne then add a tin of tomato puree (but again I had run out of this).

In another pot, melt 50 grams of butter, and stir in about 3 heaped TBSP of flour to form a runny paste.  Add to this about 3 cups of milk and allow to thicken a bit.  Keep stirring.  Add 2 cups grated cheese – today I used half edam and half parnesan.  I also added a quarter cup of leftover sour cream, and a few TBSP of basil pesto.

Once this lot has thickened, layer up the lasagne in an oven dish.  Put down a cut sheet of egg lasagne, then some of the meat sauce, then some of the cheese sauce.  Repeat until you have used up your contents.  Usually I finish with a layer of lasagne sheet on top (like in this vege lasagne) but I wasnt really paying attention today so it ended up with mince and cheese sauce on top.  No worries.  Normally I use half a packet of egg lasagne sheets, and freeze the rest to make another next time.

Transfer to the oven and cook a further 30-40 mins on 180degC.  Perfect for a simple reheat later on, and makes for greast next-day leftovers.  If you have some spinach you could layer that in there too like in the vege lasagne version.  Today it is so freezing indoors I reckon I could just put the lid on this and leave it out on the bench. brrrr.
