Tonight MIL is coming for tea. I’ve used the Maori Bread again tonight, this time to make a stuffing for the bird. I am loving the beetroot about at the moment so the roasted veges will be beetroot, carrots, potato and yams.
MAORI BREAD STUFFING (FOR ROASTED CHICKEN)
In a kitchen whizz, blitz together:
3 thick slices of Rewena / Maori Bread
1/4 cup of dried thyme
a good few twists of cracked pepper
a four finger pinch of seasalt
and a few lugs of NZ olive oil.
STUFF the bird and seal the end with a piece of crust from the Maori bread.
