This morning I felt like making eating pancakes. I hauled out the Nigella’s and trawled the index of each until I found this, the Nigella Express “Homemade Instant Pancake Mix”. The concept is you make up a large quantity of the dry ingredients, then use a cup sized portion of it with 1 egg, 1 cup of milk and 1 tablespoon of melted butter to make the fluffy pancakes. You are then left with EXACTLY enough mix to fill an agee jar. Genius! Though I’m sure it would look much cuter in the Nigella jars, hmmmm? The dry mix is: 4 cups flour 3 tablespoons of baking powder 2 teaspoons of baking soda 1 teaspoon of salt 2 tablespoon + 2 teaspoon of sugar (I admit I round this up to 3 even tablespoons). Simply whisk a cup of this mix as described above and cook on the buttered griddle. Express suggests serving with a blueberry syrup so I made a simple one with frozen berries simmered with water and caster sugar, then served a dash of that on top of the pancake with brown sugar and a squeeze of lemon juice.
